Confit Tomato with Garlic Recipe

Talking about summer is talking about simple and light recipes with fresh and seasonal foods, such as tomatoes. Why not give a twist to this fruit and make a practical recipe that you can use in salads, with rice, pasta or as a side dish?

We show the recipe of Confit Tomato with Garlic which, in addition to its simplicity and versatility, also allows you to use the resulting liquid as a vinaigrette, making this a perfect recipe for your holidays!

Take note:

Preparation time: 10 minutes
Cooking time: 1 hour 30 minutes
Serves: 2 large bottles

Ingredients:

  • 1.5 kg of cherry tomatoes
  • 250ml of olive oil, plus the oil to fill the jars
  • 1 head of crushed garlic
  • Salt

Preparation:

  1. Place all ingredients in Le Creuset Low Casserole and bake at 120°C for 1 hour and 30 minutes.
  2. Remove from the oven and place in a jar.
  3. Cover with olive oil and close with an airtight lid.
  4. Serve in salads, rice, pasta or as a side dish. Use the casserole liquid as a vinaigrette or to eat with toasted bread and mild goat cheese or ricotta.
