Healthy recipes for a perfect picnic

How long has it been since you went for a picnic? Take advantage of the nice weather and organize a romantic picnic, with friends or family. The best food to bring for a picnic is not only the most delicious but also the simplest. In this article, you will find healthy and tasty recipes to share.

  • Check the weather the day before;

  • Choose a nice place, with level ground/tables in good condition and with shade;

  • Avoid bringing campfires or making bonfires in places that do not have the conditions for it;

  • Take one or two towels/blankets big enough to put all the food and still have room for everyone;

  • Don't forget cutlery, glasses, napkins, and a garbage bag;

  • Give preference to food that tastes good at a cold temperature;

  • Avoid ice cream, puddings, and cakes with cream because they are difficult to transport and attract bugs;

  • Use suitcases or thermal coolers to transport the food;

  • Place artificial ice sheets or previously frozen water bottles to keep the food fresh and avoid food poisoning.

HEALTHY RECIPES FOR A PERFECT PICNIC

Avocado hummus

Ingredients

1 medium/large avocado
220g chickpeas
1 clove garlic
Chilli flakes
1 lime
Coriander
Salt
2 carrots
2 peppers with mixed colours
1 zucchini

Method of preparation

In a food processor add the avocado, chickpeas, chopped garlic, chilli flakes, lime juice and salt to taste and grind. Top the hummus with the cilantro leaves and some chilli flakes. Serve with carrots, peppers and pickled zucchini or toast. You can make this recipe the night before and store it in the refrigerator.


Chicken Wrap with Vinaigrette Sauce (3 large or 6 small servings)

Ingredients

1 large tomato cut in half-moons wedges
1 grated carrot Corn (optional)
Lettuce and arugula mix
Wraps
500g chicken strips
250g of cream cheese
Sauce
1 tablespoon mustard
2 tablespoons of olive oil
1 tablespoon of cider vinegar
Salt

Method of preparation

Start by making the vinaigrette. Add the mustard, olive oil, cider, and salt and mix vigorously. Set aside. In a frying pan, sauté the chicken strips in olive oil and season to taste.

Heat the wrap and spread a thin layer of cream cheese. Arrange the lettuce and arugula mix, the grated carrot, the tomato, and the corn. In the center, place as many chicken strips as you want and drizzle with the vinaigrette. Roll the wrap and store in an airtight box. If you are not leaving the house right away, store in the refrigerator.


Caprese salad skewers (6 skewers) 

Ingredients

18 cherry tomatoes (or 9 if cut in halves)
12 mozzarella cheese balls
Basil leaves
2 tablespoons of olive oil
1 tablespoon of balsamic vinegar
1 teaspoon Dijon mustard
Garlic powder
Salt
Pepper

Method of preparation

Start by making the sauce. Combine the olive oil, the balsamic vinegar, the Dijon mustard, and the seasonings. Stir and set aside. To assemble the skewers, put the tomatoes whole or in halves in the skewer, the basil leaves, and the cheese alternately. Then drizzle with the sauce you made earlier. Keep chilled.


Vegetable muffins (12 pieces)

Ingredients

250g wheat flour
2 eggs
175ml vegetable drink with no sugar
100g broccoli
150g zucchini
100g carrot
1 tomato
1 tablespoon yeast
Salt
Pepper

Method of preparation

Grate the zucchini, the broccoli, and the carrot. Cut the tomato into small pieces and set aside. In a bowl, put the eggs and the vegetable drink. Add the flour and stir in the vegetables. Add the yeast, salt, and pepper. Pour into muffin pans and bake at 356 °F for 30 to 45 minutes.


Banana bread

Ingredients

3 ripe bananas + 1 for decoration (optional)
1 cup oat flour
1 cup wheat flour
5 tablespoons brown sugar
3 tablespoons coconut or sunflower oil
1 tablespoon yeast
1 teaspoon cinnamon
1 cup vegetable drink
Cider vinegar or lemon

Method of preparation

Add a few drops of lemon or cider vinegar to the vegetable drink and set aside for at least 3 minutes. Crush the three bananas with a fork and put them in a bowl. Add the flours, sugar, cinnamon, oil, vegetable drink, and finally the yeast. Stir until you obtain a homogeneous batter, but avoid over mixing.
Pour the batter into a previously greased or parchment paper-lined cake mould and bake in a preheated oven at 356 ºF for about 40 minutes. Let it cool before slicing.

Tip: Before baking, cut a banana in half and place it in the batter.
