If you are an egg lover and you still haven’t tried the delicious eggs benedict, you don’t know what you have been loosing. They are particularly loved by the fans of the mythical brunch.
Ingredients
For hollandaise sauce:
1º Start to make the hollandaise sauce
To make hollandaise sauce you should start with pouring lemon juice and vinegar on a small bowl, add yolks and mix it well with a whisk, preferably.
When the mixture gets uniform, you can stop the whisking.
Next, put the bowl over a pan with hot water and blend until it starts to thicken. Slowly, add 100 grams of butter.
After adding all the necessary quantity of butter, continue to wrap until the mix starts to get thick. You have to pay special attention to your bowl, you must not let it get too much hot, taking the risk of cooking the yolks.
Continue to blend until our mix forms a shape of ribbon when you pour it with the whisk. When the sauce starts to reach this point, it’s perfect! Now let it rest and let’s prepare our eggs.
2º Prepare the eggs

3º Toast the slices of bread
To plate the eggs, it is necessary to toast the slices of loaf bread or, if you prefer it like us, you should toast slightly the muffins.
Then, place two slices of bacon already fried on each half of the muffins or on the bread slices. Next, add an egg to each one and lastly cover the eggs with a generous dose of hollandaise sauce.
