Steak with Butter Café de Paris Recipe

Ingredients:

  • 2 T-bone steaks
  • Sea salt
  • Black pepper mill
  • Oil
  • Butter to finish

Butter Café de Paris:

  • 2 teaspoons of drained capers
  • 1 small red onion finely chopped
  • 1 crushed garlic clove
  • 1 teaspoon of Dijon mustard
  • 2 teaspoons of chopped parsley
  • 1 teaspoons chopped thyme
  • 1 teaspoon of sliced ​​scallions
  • 2 teaspoons Worcester Parsley
  • 20 g of crushed tomato
  • 1 teaspoon of cayenne pepper flakes
  • 250 g of softened butter in cubes
  • Salt and pepper

Preparation

  1. Put all the ingredients in a kitchen robot and grind until they are well integrated. Place the mixture in cling film and roll it into a cylinder shape. Tightly close the cling film and place in the fridge or freezer.
  2. Dry the steak with a kitchen towel and season with salt and pepper (it's best to cook the steak at room temperature).
  3. Place the Le Creuset Cerise Grill over medium heat. Add the oil and place the steak on the grill, with the fat facing down (this is done so that the fat is golden and crunchy). When browned, cook the steak as you like (6 minutes per side) and finish in the oven at 200°C for as long as necessary.
  4. Add a slice of Café de Paris butter to the steak just before cooking is finished and bake until melted. Serve with French fries or a slice of well-toasted bread with mustard, mayonnaise, thinly sliced ​​red onion and fresh watercress for a French-style picnic sandwich.
