Trip to Mexico: Chicken Enchilada Skillet Recipe

This week we are in Mexico!

Since we've already shared with you, here, some curiosities about Mexico and the recipe for the most famous dish in this country - Tacos - we couldn't help but share another of the most delicious recipes of this cuisine: Chicken Enchiladas!

Enchiladas are usually served as a starter and traditionally consist of a tortilla stuffed with meat and beans, topped with a spicy sauce and grated cheese, which is then roasted.

Curiosity: the word “Enchilada” is the past participle of the verb “Enchilar” which means “to add chili pepper to”

This dish is originally from Mexico and, although its history is not well known, it is known that its inspiration was probably from the Aztec people, who lived near the lake and ate corn tortillas wrapped in small fish. However, it was not until 1831 that Enchiladas first appeared in a Mexican cookbook.

Let's put it into practice! Next, you'll find a simple, practical, and quick Chicken Enchiladas recipe to eat and cry for more, and *spoiler alert* you'll only need a bowl and a skillet!

Servings: 4-6
Total time needed: 25 minutes

Ingredients:

  • 1 tablespoon vegetable oil
  • 1/2 onion, chopped
  • 2 garlic cloves, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1 jar medium red sauce
  • 1/2 cup sour cream, more for serving
  • 4 corn tortillas, torn into quarters
  • 4 cups shredded cooked chicken
  • 1 can black beans, drained, rinsed
  • 1 cup shredded Mexican cheese blend
  • Pickled jalapeños and cilantro (for serving; optional)

Preparation:

  1. Preheat the oven to 260ºC. Heat oil in a skillet (which can later be placed in the oven) over medium. Add onion, garlic, cumin, and salt and cook, stirring, until softened, about 5 minutes.
  2. Transfer the onion mixture to a large bowl, add sauce, 1/2 cup sour cream, and 1/4 cup water to onion mixture and stir to combine. Fold in tortillas, chicken, and beans until thoroughly coated.
  3. Return the mixture to the skillet and cook over medium heat until warmed through, about 3 minutes. Sprinkle cheese over.
  4. Transfer the skillet to the oven and bake until cheese is melted and bubbling, about 5 minutes.
  5. Top with sour cream, jalapeños, and cilantro, if desired.
