6 Fresh Recipes to Celebrate Spring

After a harsh winter, nothing better than the sound of birds singing, flowers blooming and, of course, the rising temperature.
We no longer need heavy and hot foods to comfort us, but rather, light foods and fresh drinks. Therefore, IOC has selected 6 light recipes that will make your spring days more tasty and colourful. Delight yourself!


Spring Quiche

Ingredients:

  • 1 roll of shortcrust pastry
  • 100g peas
  • 70g broccoli
  • 4 eggs
  • 3dl cream
  • 2 tablespoons chopped parsley
  • ½ teaspoon clove powder
  • Salt to taste
  • Pepper to taste

Method of preparation:

  1. Start by stretching the shortcrust pastry out on a worktop. Line a round pie dish and set it aside.
  2. Clean and wash the broccoli and place it on the pastry.
  3. Add the peas as well.
  4. Meanwhile, put the eggs in a bowl, add the cream and beat well until smooth.
  5. Season with salt and pepper, clove powder and chopped parsley.
  6. Pour the mixture over the vegetables in the pie and bake in a preheated oven at 180ºC for about 35 minutes.
  7. Serve while still warm with a nice salad.


Couscous Salad

Ingredients:

  • 300g couscous
  • 1 teaspoon of butter
  • 1 large tin of sweetcorn
  • 1 can of peas
  • 1 carrot
  • 6 pitted black olives
  • Chopped fresh parsley, salt and olive oil to taste
  • Balsamic vinegar to taste
  • 1 teaspoon of honey

Method of preparation:

  1. Cook the couscous according to the instructions on the package (it's so simple!).
  2. Break up the cooked couscous with the help of a fork and butter.
  3. Pour the couscous into a large serving bowl.
  4. Add the corn and peas, duly drained.
  5. Add the grated carrot and mix well.
  6. Season with salt, olive oil, balsamic vinegar and honey.
  7. Garnish with olives and fresh parsley.


Spinach Salad with Fusilli

Ingredients:

  • 250g fusilli pasta
  • 250g tender spinach leaves
  • 100g walnuts
  • 50g sultanas
  • 2 fresh cheeses
  • 200g cooked shredded chicken
  • Olive oil to taste
  • Vinegar to taste

Method of preparation:

  1. Cook the pasta in plenty of water with a little salt, for about 8 minutes. Drain and set aside.
  2. Wash the spinach leaves.
  3. In a large bowl, mix the pasta with the spinach, the walnuts, the sultanas, the fresh cheese cut into pieces and the shredded chicken.
  4. Season everything with olive oil and vinegar and serve.


Salmon with Strawberry Sauce

Ingredients:

  • 4 salmon fillets
  • 2 cups of chopped strawberries
  • ½ small onion, chopped
  • Juice of 1 lemon
  • 1 teaspoon grated ginger
  • 1 tablespoon agave syrup
  • 1 clove minced garlic
  • 2 tbsp extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt to taste
  • Cayenne pepper to taste

Method of preparation:

  1. Season the salmon fillets the day before with vinegar, salt, pepper and garlic. Leave to rest in the refrigerator.
  2. One hour before preparing the salmon, combine in a bowl the chopped strawberries with the onion, lemon juice, agave and ginger. Mix everything, lightly mashing the strawberries and let it rest.
  3. In a frying pan, drizzle with a dash of olive oil and grill the salmon fillets.
  4. In another pan, sauté for about 5 minutes the strawberry mixture prepared an hour before, stirring constantly.
  5. Serve the grilled salmon with the strawberry sauce on top with white rice or mashed potatoes.


Spring Sweet

Ingredients:

  • 200g Maria biscuits
  • 180g sugar
  • 1 tin of peaches in syrup
  • 1 can of pineapple
  • 5dl cream
  • Strawberries (to decorate)

Method of preparation:

  1. Start by crushing the biscuits until they are fine like breadcrumbs.
  2. Drain the pineapple and peach from their syrup and cut them into small pieces.
  3. Whip the cream into a thick whipping cream, adding the sugar.
  4. In a large, deep, serving bowl, layer the pineapple chunks, half the whipped cream and the biscuit, the peach chunks and again the whipped cream and biscuit.
  5. Place in the fridge until well chilled, remove and serve immediately one of the spring recipes sweet version!
