Surprising Recipes for Father's Day

The day that is dedicated to him is coming: he who is our greatest admirer, the man who is always rooting for our success and happiness, he who is our great hero.

For this special day, one of the best ways to surprise the one we love the most is to prepare a tasty and special meal. Therefore, IOC has prepared a list with delicious and easy recipes that will provide unique moments between father and child. What's better than making some snacks in the kitchen and having fun? Enjoy every moment!



Cheese Bread

Starter

Time: 40 min
Yield: 30 servings

Ingredients:

  • 715g sour tapioca flour
  • 85g sweet tapioca flour
  • 1 cup of milk
  • ½ cup of oil
  • 2 eggs
  • 250g of semi-hard cheese (or other)
  • 100g parmesan cheese
  • salt to taste

Method of preparation:

  1. In a bowl add the sour tapioca powder, the sweet tapioca powder and the salt and mix.
  2. Boil the milk and oil in a pan.
  3. When this mixture cooled down, add it to the mixture of powders and knead the dough until it loosens from the hands: that is the point.
  4. When the dough is ready and cooled down, add the eggs and knead again until it becomes loose.
  5. Then add the cheese and mix again.
  6. With the dough made, make small balls of 2 cm diameter.
  7. Place them on a baking tray, leaving some space between them.
  8. Bake in the oven at 180ºC, preheated, for about 40 minutes.

Tip: if the dough becomes too liquid, add more sour or sweet tapioca flour and cheese. If you like cheese bread with a more refined taste, you can double the amount of cheese without fear.



Bruschetta

Yield: 6 servings

Ingredients:

  • Slices of Italian bread or baguette
  • 2 ripe tomatoes
  • ½ cup of olive oil + to coat the bread
  • 1 clove of garlic
  • 1 tablespoon of oregano
  • Basil leaves
  • Salt to taste
  • Slices of mozzarella cheese (optional)

Method of preparation:

  1. Cut the tomatoes into small cubes and mash the garlic.
  2. In a bowl add the cubes to the olive oil and mix well.
  3. Add the basil, oregano and salt and stir again. Set aside.
  4. Drizzle the slices of bread with olive oil and place them in the oven until golden.
  5. On the top of the slices of the bread place the slices of mozzarella cheese (optional).
  6. Place a little of the mixture on top of each one and serve while still warm. Finish with the basil leaves and return to the oven for 5-10 minutes.



Chicken Wrap

Main Dish

Time: 15 min
Yield: 4 servings

Ingredients:

  • 2.5 chicken steaks
  • Salt to taste
  • Pepper to taste
  • 5 Fajitas (wrap dough)
  • 267g cream/milk cream
  • 1.5 tbsp Dijon mustard
  • Lettuce to taste
  • Corn as needed
  • Cherry tomatoes to taste

Method of preparation:

  1. Cut the chicken into 2.5 cm strips.
  2. Season with salt and pepper and seal in a pan.
  3. Mix the thick cream + mustard.
  4. Start assembling: on the fajita place the cream made, followed by the lettuce, corn, tomatoes and chicken.
  5. Fold in wrap shape: first the bottom, then the left side and finally the right side (this way nothing will come off, neither the bottom nor the sides).
  6. Seal the wrap in the pan (optional) and it's done!

Tip: for the cream to be just right, it should be thick and not liquid.



Tenderloin with Honey and Mustard

Main Dish

Time: 30 min
Yield: 4 servings

Ingredients:

  • 4 pork loin steaks
  • Salt to taste
  • Mustard seeds or 1 teaspoon of Dijon mustard
  • Coriander seeds (optional)
  • Juice of ½ sicilian lemon
  • Olive oil to taste

For the sauce:

  • Juice of ½ sicilian lemon
  • 6 tablespoons of honey
  • 4 spoons of Dijon mustard
  • Salt to taste

Method of preparation:

  1. Macerate the seeds with the salt. Add the juice of ½ lemon and season the steaks with the mixture.
  2. Put it aside in the refrigerator for 20 minutes.
  3. Then sear the steaks in a frying pan with olive oil until the desired point.
  4. Sauce: mix all the ingredients and cook in a pan on low heat until thickened.
  5. Finally serve the steaks dipped in the sauce.

Tip: if you prefer to make them with a piece of pork loin, bake them in a preheated oven at 200ºC for 45-50 minutes or until the desired point is reached.



Mini Nutella Croissants

Yield: 8-12 servings

Ingredients:

  • 1 pack of puff pastry
  • 1 egg
  • Nutella

Method of preparation:

  1. Cut the puff pastry into 8 or 12 equal slices.
  2. Place a spoonful of nutella on each triangle.
  3. Roll the triangles carefully into a croissant shape.
  4. Brush them with the beaten egg yolk.
  5. Bake in a preheated oven at 180°C for 10 minutes.
  6. Sprinkle the croissants with icing sugar (optional) and serve.

Tip: the spoonful of nutella can easily be replaced with 1 piece of cooking chocolate, or if you prefer to make a homemade and healthy nutella we have the perfect article for you here.



Father's Cake

Yield: 6 servings

Ingredients:

  • 200g sugar
  • 150g flour
  • 100g butter
  • 10g walnut kernels
  • 6 eggs
  • 1 teaspoon baking powder
  • Margarine for greasing
  • Flour for sprinkling

For the topping:

  • 150g sugar
  • 6 egg yolks
  • 1.5 dl water
  • Walnut kernels to taste

Method of preparation:

  1. Prepare the topping: in a pan, place the beaten egg yolks, add the water and sugar and stir well. Bring to the boil, stirring constantly until thickened. Pour into a bowl and leave to cool.
  2. Grease a rectangular baking tray with margarine and sprinkle it with flour. In a bowl, beat the butter with the sugar until it becomes a fluffy cream. Add the eggs, one by one, and beat constantly.
  3. Chop and mix the walnuts with the flour and yeast and add them little by little to the previous mixture, always beating very well. Pour into the tray and bake in a preheated oven at 180ºC for around 45 minutes.
  4. Remove from the oven, take out of the tray and leave to cool. Arrange on a plate, drizzle with the egg yolk cream, decorate with coarsely chopped walnuts and serve.
